With summer coming to an end, I’ve been loving making dinners like this Warming Simple Pasta Salad. This is a staple for me that takes less than 30 minutes to make. If you prefer more flavor for your pasta, feel free to add a sauce of your choice!
INGREDIENTS
Shredded Rotisserie Chicken
Frozen Peas
Onions
Zucchini
Farfelle GF Pasta
Olive Oil
METHOD
1 | Shred chicken of choice (rotisserie, or cook your own)
2 | Bring water in a pot to boil and cook Farfelle GF Pasta. Once fully cooked, drain and rinse with cold water
3 | Splash Olive Oil in pan and add Onions. Cook on medium for 2-3 minutes until brown
4 | Add in Frozen Peas and Zucchini and cook for 3-5 minutes until brown
5 | Add GF Pasta and Shredded Chicken to pan with the Onions, Frozen Peas, and Zucchini. Cook for 3-4 minutes, stirring regularly
6 | Add to bowl and enjoy!
