Lazy Sunday eggs!
For those of you who prefer a sweet breakfast but want to keep it low sugar and high protein - try this! It sounds weird but trust me, it works!!
This high- protein recipe takes just 5 minutes to make and is really satisfying. A sweet spin on your usual omelette ;)
INGREDIENTS
⁃ 3 eggs
⁃ Olive oil
⁃ Pinch of cinnamon
⁃ Pinch of cardamom
⁃ Pinch of salt
⁃ Splash of water
⁃ Sunflower seed butter
⁃ Blueberry jam
METHOD
1 | Crack 3 eggs into a bowl and whisk
2 | Add splash of water
3 | Add pinch of cinnamon, cardamom and salt
4 | Whisk again
5 | Heat pan and add olive oil
6 | Pour egg mixture into pan at medium heat and add lid
7 | Once golden flip and cook on the other side for a few minutes with lid off
8 | Once cooked spread desired amount of sunflower seed butter, blueberry jam and sprinkle cinnamon on top.
