Ingredients:
Arugula
Purple potato
Asparagus
Sprouts
Avocado
Radish
Organic rotisserie chicken
Sunny tahini
Lemon
Salt
Pepper
Method:
Preheat oven to 400f
Place your purple potatoes in the oven and bake for 30mins
Place your asparagus in the oven and bake for 20 mins
Add arugula to a shallow bowl and squeeze lemon over, add salt & pepper.
Top your arugula with sliced radish, avocado, the roasted asparagus, roasted & sliced purple potato, and rotisserie chicken.
Sprinkle a handful of sprouts
Drizzle tahini over bowl
